Quick and Easy Pancit

Today for lunch was my first time to make pancit (with the help of mum of course)

Things you would need:


Bok Choy: Stems chopped in small pieces, Leaves in larger cuts. In separate bowls
HANDY TIP FROM MOTHER: when using bok choy, have them soak in water and salt to remove any bugs/dirt.

Snow Peas

Fish balls, chopped
Carrots, sliced
Onions,finely sliced
Cooked chicken, shredded
Spanish sausage, thinly sliced
Hokkien noodles, warm in boiling water and then drain

Raw Banana prawns, peeled

Sotanghon(Vermicelli), cook in boiling water and drain
Mama Sita Achuete achiote annatto powder

Chicken stock, soy sauce, fish sauce and pepper(no picture)

NOW, how to make it :D

In a wok with a little oil:
~ fry the onions
~ add about 2 teaspoons of mama sita powder
~ add the spanish sausage
~ add the prawns
~ add the shredded chicken
~ add some chicken stock, mix and let it cook for 5-10 minutes
~ place mixture in separate bowl and put to the side

In the wok again with a little bit of oil:
~ cook the carrots
~add snow peas
~ add bok choy stems
~ add bok choy leaves
~ mix for a couple of minutes, then remove from wok into another separate bowl and put to the side.

Back to the wok:
~3 cups of chicken stock
~sotanghon noodles
~ dash of pepper
~ splash of soy sauce
~ splash of fish sauce
~add hokkien noodles
~ mix well till liquid is evapourated
HANDY TIP FROM MOTHER: if there is too much excessive liquid, add a small amount of cornstarch and water. It will help to get rid of the liquid.

Mix in first bowl of ingredients(onion,chicken,prawn,sausage)
Mix in vegetables
AND YOU'RE DONE :D
